WHY vegan? Well the farming and diary industries are basically concentration camps for animals, AND when you live in a van and #wildcamp a lot, your fridge will go warm and cold often, so your meat and dairy will not last long.
But more importantly than the dodgy fridge, for health, and for the environment... I'm creating this list for my own reference as I've found no single large source of vegan campervan food recipes so far. Many van'ers don't have fancy rigs with an oven, my recipes assume a fridge and gas burners only.
*whilst the egg farming industry is still cruel, I am still eating eggs & fish and so some of the following has eggs/fish although I have been buying organic / free range for years. I also have a keen interest in fitness and nutrition, so I include a lot of food with good nutrition e.g. sundried tomatoes for iron content.

Breakfasts
Fresh squeezed orange juice
Fruit salad with meusli, coconut milk and cinnamon sprinkled on top
Boiled eggs with toast soldiers & avocado (instead of butter)
Just toast with marmite (optional), avocado, olives, sun-dried tomatoes on top
Lunches & Dinners
Salad of any description... e.g. Greek, Potato & chive, Baby spinach,
Lentil burger
Felafel
Tuna or egg salad
Red or Green Thai curry with coconut milk, vegetables & nuts
Veg / lentil / coconut milk soup & bread
Vegetable chilli & rice
Baked potatoes & any topping such as vegetable chilli or baked beans
Rosti (grated potatoe mixed with herbs & egg, then fried flat)
Lentil daal (lasts in the fridge for days too)
Snacks / Desserts
Homous with carrot & celery sticks
Coleslaw
Tsatsiki & Bread & Olives
Drinks
Fruit smoothie (if you have a juicer!!)
Lemonade - Fresh squeezed lemons, soda stream water, brown sugar
Fruit tea or Rubios or Vanilla Rubios
Black tea is only good without milk if the tea is great quality
THE ACTUAL RECIPES
Vegetable Chilli & Rice
Heat coconut oil for a few seconds, throw in chopped onion and garlic until soft, add thai curry paste or any kind of chilli paste or powder, add chopped mushrooms and wait until cooked a bit, add can of tomatoes or soft, small chopped ripe tomatoes ideally, add can of kidney beans or if you're good, soaked overnight dried kidney beans, and serve with rice. Add any other vegetables you might like, especially any that aren't doing well in your camper fridge!
